Mama's Corn Salad


My mom is famous for this corn salad.  Famous.  We rarely have a pool party or other outdoor event without it.  It's super simple, takes no time, requires no cooking and can be made way in advance.  All the things you need in a summer side dish.  One thing though...this salad contains mayonnaise.  I'm not sure if you've noticed or not, but to date, I have never posted a recipe using mayo.  I hate mayo.  There are only two things I don't eat...tuna and mayo.  Period.  However, that being said, I'm in love with this salad and just close my eyes when I add the mayo in...then I pretend it's not in there when I eat a huge serving.  This salad rocks :).  Thanks Mom!

Shopping List
2 (15 oz) cans corn, drained
2 cups cheddar cheese, grated
1 cup mayonnaise
1 green bell pepper, chopped
1 red onion, chopped
1 (10 oz bag) Chili-Cheese Frito's

In a large bowl, mix the first 5 ingredients together, cover and chill until ready to serve.  Toss Frito's in right before serving.

That's it.  Done.  Finished.  Simple.

You don't eat tuna and mayo (which I LOVE) and I can't eat corn -- it makes me throw up. Weird, I know. Anyway, this sounds great, I wish I COULD eat it, but I am thinking that I will enjoy my tuna casserole while you enjoy your corn salad. Enjoy some for me!

Was given this recipe about 2 years ago, honestly thought it sounded awful the combo of cold corn & mayo. I have made it numerous times for cookouts & every single bit is gone, such a hit! I also add diced tomatoes, gives it a new flavor! :)

Hi, new here!! My mom has also made this exact same thing for years! Its really awesome- and I dont even like raw onions or bell peppers & I eat the crap out of this stuff lol! The only thing we do different is crush up the fritos right before serving and put on top. I think I will have to make some of this tonight now ;)

Hi Shay!

I made this last night because I love corn, mayo and cheese! Yum!

I thought I would add bacon because I love bacon and forgot the fritos.

I also used the olive oil mayo instead of regular mayo.

It did not turn out as yummy as I had hoped!

Just wanted to share my experience with others because some times tweaks to recipes can be tremendously outstanding. Or an epic fail such as last night.

The bacon bits made it way too salty. I used the bacon bits already precooked by Hormel.

I make a variation of this corn salad, and it's always a hit! Fiesta canned corn, green onion, mayo and chili cheese fritos.

People always think it sounds weird until they try it!

Oh my gosh! I have just recently found your blogs, and I was going to email this recipe to YOU today! Mine is very similar, but I add a cup of sour cream and a can of drained rotel. (I also leave out the green bell pepper.) I've used both green onions, and red onions. Both are excellent! I made this last Sunday, and I've had it for lunch everyday this week! It's so yummy and summery!
