Dinner Tonight: Baked Burritos

Hello yummy!
This meal is easy, easy, easy!  And super versatile too!  You could swap out the ground beef for chicken or turkey or you could omit it all together and have a vegetarian burrito.  This is one of those dinners you have on crazy busy week's almost as easy as going through the drive-thru but way better for you and your family!
Shopping List
1 pound ground beef
1 package taco seasoning
1 can of Rotel, drained
1 can black beans, rinsed and drained
1 jalapeno, chopped
2 cups cheddar cheese, shredded
8-10 green onions, chopped
Large burrito size tortillas (the package with say burrito size)
Salsa to garnish
Preheat oven to 425 degrees.
In a large skillet over medium high heat, brown your ground beef.  Once brown, add in your taco seasoning and incorporate 2-3 minutes.  Add in your Rotel, reduce heat to low and simmer about 3-4 minutes.
Meanwhile, line a baking sheet with foil (for easy cleanup!), lightly spray it with Pam and lay out 4 tortillas.  Sprinkle your black beans down the center of each tortilla, then top it with your taco meat mixture, then layer on your chopped jalapenos, cheese and onions (reserving a few to garnish at the end).  Fold burrito style (fold in the ends first, then fold over the two sides) and place on the baking sheet seam side down.
Bake about 15 minutes.  Remove from oven and top with salsa and extra green onions.
  This is the perfect dinner for a busy family.

These sound great, and not particularly much more work than regular tacos to add a little variety to our meals.

This was great - I used soy crumbles to keep it vegetarian and added the beans to the mixture to make it easier... Yum! Thanks for the great recipe.

uh... I think you need to move this recipe - you had it in the Vegetarian section, and it has meat in it...

Read the first line of the can just omit the meat altogether and make it vegetarian :).

We made these last night and they were so good! I made four burritos (with enough leftover meat for a taco salad later in the week) and it was perfect for my husband and I - one burrito each for dinner, and the remaining two we wrapped in foil for easy lunches the next day (I think they were even better the next day, which I was not expecting!)
