A few months ago, my sweet brother realized Andrew and I needed a night out, so Uncle Seanie showed up to babysit, and he sent us to one of his favorite restaurants in Dallas. He told me I had to have the Chicken and Waffles for dinner. I'm not one to turn down chicken and waffles...but I had never heard of them served at a fancy restaurant...usually they're at more laid back diners and such. Needless to say, I ordered them, ate every single bite of them, and then thanked Sean profusely for suggesting them.
Then I started thinking...why can't we jazz up basic waffle mix at home and make fancy chicken and waffles on a week night? And thus...this post was born. This dinner was soooooo easy but looks kind of fancy, right? Plus, I'm already thinking of a thousand ways to mix and match this method...brace yourself people, you might see many variations of this in the coming months.

4 cups Bisquick
2 cups milk
1 cup Parmesan cheese, grated (plus a little more for garnish)
3/4 cup chives, chopped (plus a little more for garnish)
2 teaspoons black pepper
Spaghetti Sauce, heated
One batch of my Bisquick Chicken Parm
Prepare my Bisquick Chicken Parm as directed. Also, warm your spaghetti sauce. When everything is ready to go, begin making your waffles.
Preheat your waffle iron.
In a mixing bowl, combine Bisquick, milk and eggs until combined. Stir in cheese, chives and pepper. Pour batter into hot waffle iron that has been sprayed with Pam and bake until cooked through. (This should make about 4 large waffles depending on your waffle iron.)
When your waffles are ready, assemble your dinner: waffle, topped with chicken, topped with sauce and garnished with cheese and chives.
Maybe this sounds kind of daunting but it was really simple! The Bisquick Chicken Parm is super simple to whip up and then my kids had a blast helping me make our savory waffles. If you use store bought spaghetti sauce, you're really just assembling everything. A yummy way to eat your waffles for dinner. Enjoy!
