Dinner Tonight: Lasagna Soup

 The title of this recipe sold you, right?  Lasagna Soup...how can that not be fantastic?!?!  Well trust me...it was.  I found this recipe here on Pinterest for Lasagna Soup and decided it was a must try for our family.  I tweaked it just a tad but not much.  What Andrew liked most about this soup was that it wasn't too soupy...it's very thick and hearty (and I think guys like to pretend they're not eating soup for dinner...so this is a good compromise).  My favorite part about this recipe was that it was made in the slow cooker.  Just nothing better than soup in the slow cooker, right?  I'm telling you...this recipe is a keeper.

Shopping List
1 pound ground beef, browned and crumbled
3 cups beef broth (add more if you want it more soupy and less thick)
1 onion, chopped
1 (28 oz) can diced tomatoes
1 (6 oz) can tomato paste
1 (8 oz) tomato sauce
2 tablespoons Italian seasoning blend
2 cups uncooked pasta
Mozzarella, Parmesan and/or Parsley to garnish

Layer in your slow cooker, ground beef, broth, onion, tomatoes, tomato paste, tomato sauce and Italian seasoning.  Cover and cook on low 7 to 8 hours or on high 3 to 4 hours.  About 30 minutes before you're ready to eat, add your uncooked pasta into the slow cooker, cover and continue cooking another 30 minutes.

Ladle soup into bowls and garnish with some mozzarella, Parmesan and/or parsley.

A hearty soup for a winter's night.

ever since making your slow cooker stroganoff, i'm obsessed with any slow cooker recipe where you cook the pasta in with everything else. seriously, changed my world. this looks sooo good! i have some ground turkey i need to use, so i think i'll sub that in and try this one out!

I saw this on pinterest too, thanks for the test, glad it's a good one! Have you tried the lasagna roll ups? Seems like it would be easier to throw together than regular lasagna.

I made your honey mustard tostadas the other night and they were a huge hit with my family...love the blog! Glad to find another "real mama cook" to follow!

This looks great! I love Lasagna, but I always find it so time consuming. This seems much easier.

How can this taste good without salt? I'm asking this honestly, because I am a struggling cook. I have tried so many recipes to a "T" that people claim to be delicious, and find that they don't taste good at all. I feel like all succesful cooks have some secret ingredient that they throw in and don't tell any of the rest of us.

Yes! This is a One Pound meal...that means you can use one pound of ground beef, chicken or turkey!
