It's almost St. Patrick's Day! Seriously, is there anything more festive than a cupcake? I think not. A simple green cupcake recipe that looks festive and tastes delicious is about as good as it gets. You'll be making these again and again...not just for St. Paddy's Day. Come summer, this is the perfect bite for sitting out by the pool. Key Lime Cupcakes...delicious!
And here are your main ingredients...simple, right? The Key Lime frosting is seasonal (along with Pink Lemonade and Orange Creamsicle)...if you're making this and can't find the frosting, don't despair You can click here to see my homemade Key Lime frosting or you can just frost these key lime cupcakes with a simple vanilla frosting. They will be delicious either way!
1 box white cake mix (plus eggs, oil and water per box directions to prepare)
1 small box instant Lime Jello
3 key limes (or two regular limes), zest and juice
1 can key lime frosting
Preheat oven to 350 degrees.
In your mixing bowl, prepare white cake mix per box directions. Using your electric mixer, beat in your box of lime Jello, 1 tablespoon of lime zest and 2 tablespoons of lime juice. Divide batter between 24 cupcake lined muffin tins.
Bake 16 to 18 minutes or until toothpick inserted in the middle comes out clean. Let cupcakes cool 5 minutes in muffin tin before removing them to wire rack to finish cooling.
Once cupcakes are cooled, frost each cupcake with Key Lime frosting and garnish with a little key lime zest.
That's it! Simple and delicious (and green!).
