It's September. I love September. September 1st is my favorite day on the calendar. For me, it's the beginning of fall, the beginning of the holidays, the beginning of cooler weather, football, sweatpants, pumpkins and twinkle lights. It's just the beginning.
September is the month where apples shine. I decided to kick off our September with some yummy baked apples in my slow cooker. This was the perfect little snack! Not only was this method simple but it was delicious too. I looked at several different baked apple recipes before creating one for myself. This could be a snack, a breakfast or even a dessert. Let apples shine in your kitchen this month!
4 to 6 firm apples (I used Gala but you could also use Jonagold, Rome or Golden Delicious)
2 cups oatmeal (not quick cooking)
2 tablespoons cinnamon
1/2 cup brown sugar
Maple Syrup for drizzling
1 tablespoon of butter per apple
Core each apple creating a nice place to put your oatmeal mixture.
In a small bowl, combine your oatmeal, cinnamon and brown sugar with a spoon. Stuff each apple with your oatmeal mixture and place them inside your slow cooker (I used a slow cooker liner for easy cleanup!).
Drizzle maple syrup down over the tops of each apple and then place one tablespoon of butter on top of each one. Close the lid of your slow cooker and cook on low 2 1/2 to 3 hours. Remove and serve.
Your house will smell delicious after making these! Fall is here!
